1 cup pancake mix(I like Krusteaz light & fluffy Honey Wheat)
1 cup quick oatmeal
2 T firmly packed brown sugar, 1 teaspoon ground cinnamon
3/4 cup milk
2 T melted margarine
2 eggs
2 T vegetable oil
Banana, optional
Nuts, optional
Maple syrup
Frozen blueberries and strawberries, thawed.

Melt margarine in bowl in microwave
Beat eggs, add brown sugar. Stir.
Add milk and stir.
Add pancake mix, cinnamon and beat thoroughly.
Stir in oats. If using chopped nuts, add to mixture.
If using banana, slice
Heat 2 T oil in 10 inch skillet
Spoon in pancake mixture, press some banana slices into pancake.
Turn, when done, return to plate. Add syrup and fruit.
Makes 2- 3 medium pancakes.

If mixture thickens too much while cooking the first pancake, add a small amount
of milk to the mixture.
