1 c. yellow corn meal
1 c. all purpose flour
1/4 c. sugar
3 tsp. baking powder
1 tsp. salt
2 eggs
1/4 c. canola oil
1 c. milk

Directions:
Directions:
Mix all dry ingredients and then add eggs, oil, and milk. Stir until mixed well and add to a hot black iron skillet with some hot oil in the bottom of the pan.
Bake at 425 º.

If you like Mexican Cornbread you may add a can of whole kernel corn, a half of a cup of jalapeños, and two cups of grated cheese for this variety. Yummy!
