Put eggs in cool water and bring to a rolling boil. Cover and turn off heat. Let stand as follows:

For large eggs 15 - 17 minutes
For extra large eggs 18 - 20 minutes

Chill quickly in ice water.

I had the worst time with hard boiled eggs turning green until I saw this on Rachel Ray. I have not had a problem since.
