Pat's Carrot Pecan Cake Recipe

1-1/4 cup vegetable oil
2 cups sugar
2 cups flour
2 tsp baking powder
1 tsp baking soda
1 tsp salt
2 tsp cinnamon
4 eggs
3 cups finely shredded carrots at room temp
1 cup chopped pecans

Frosting
4 oz cream cheese
1/3 cup oleo
2 T milk
1 tsp vanilla
2 cups powdered sugar
chopped nuts for the top

Directions:
Directions:
Prepare 9 x 12 cake pan. Lightly oil the pan.
Shred carrots, set aside at room temperature
Combine vegetable oil and sugar. Mix well.
On waxed paper, measure flour, baking powder, baking soda, salt, cinnamon.
Mix. Add half of dry ingredients to sugar mixture, and blend.
Add in remaining dry ingredients, alternately with eggs, one at a time. Mixing
well after each addition.
Add carrots, mix well, add in pecans. Mix again thoroughly.
Pour into prepared pan.
Bake 350º 40 to 45 minutes. Until inserted tooth pick comes out clean.
Cool cake
Frost. Sprinkle with chopped nuts.
