Chocolate Pie or Pudding Recipe

1-1/4 cups of sugar
1/3 cup flour
1/2 tsp salt
3 cups milk
3 egg yolks, slightly beaten
3 squares unsweetened chocolate, melted or cut up in milk.
* ( or l/2 cup cocoa added with sugar)
1 T butter
1-1/2 tsp vanilla
1 9 or 10 inch baked pie crust
Meringue for top of pie

Directions:
Directions:
Mix sugar, flour, salt in saucepan.* Gradually stir in milk(if using chocolate add in milk)
Cook over medium heat, stirring constantly until mixture thickens and boils.
Boil 1 minute. Take from heat, gradually stir half of the hot mixture into beaten
egg yolks. Blend back into hot mixture in saucepan. Boil 1 minute more. remove from heat. Blend in butter and vanilla.
Pour into baked pie shell, and top with meringue
Meringue
Beat three egg whites, add 6 T sugar, pinch of cream of tartar. Beat until whites form soft peaks. Spoon on top of pie, and spread to edges.

Bake at 350 oven until lightly golden. About 10-15 minutes
