4 lbs of mussels
1/2 stick of butter
3 T. olive oil
2 tomatoes, chopped
4-5 green onions, or 1 small white onion
2 cloves of garlic, minced
a dash of salt to taste
1/2 c. dry white wine or cooking wine

Directions:
Directions:
Soak the mussels in cold water for at least 1 hour. Drain and rinse the mussels as you clean them. Make sure to remove any broken or dead (open) mussels.

In a stock pot, heat the butter and oil. Add to it the tomatoes, onions, garlic, and salt. Saute until tender. Add the white wine and bring to a boil. Add the mussels and cover immediately. Steam for a few minutes stirring the pot once or twice until the mussels are open. It may take anywhere from 5-10 minutes. Be careful not to overcook the mussels.

Serve in a bowl with crusty French bread.

If using white table wine, increase the salt to 1 tsp.
