"It's a Boy" Vanilla Cupcakes and Vanilla Buttercream Frosting Recipe

Ingredients: Vanilla Cupcakes 1 ¼ cups all-purpose flour 1 ½ tsp baking powder ¼ tsp salt ¾ c sugar 6 Tbs. ( ¾ stick) unsalted butter at room temperature 1 whole egg plus 1 egg white, room temperature 1 tsp. vanilla extract ½ cup milk
Vanilla Buttercream Frosting: 3 cups confectioners sugar 1 stick butter, room temperature 2 ½ Tbs milk plus more if needed 1 tsp. vanilla extract Dash salt Food coloring optional

Directions:Vanilla Cupcakes Preheat oven to 350º line a 12 cup muffin pan with paper or foil liners.
In a bowl, whisk together the flour, baking powder and salt. In another bowl (or bowl of a kitchenaid) beat together the sugar and butter on medium high speed for 2-3 minutes. Reduce speed to low and add the egg and egg white one at a time. Then beat in the vanilla. Add the flour mixture in 3 additions alternating with milk in 2 additions, beating until just combined. Scrape down sides of bowl as needed. Divide evenly among muffin cups and bake for 18-20 minutes. Cool completely
Vanilla Buttercream Frosting In the bowl of an electric mixer with a flat beater combine all of the ingredients and beat on low for about 1 minute. Stop the mixer to scrape down sides. Increase speed to medium and beat until fluffy, around 3 minutes. (makes 2 cups) |

Notes: We used these cupcakes both times to make baby announcements, both times at Margaret and Lewis's house. The first time was to announce Campbell was a boy and the second time was to announce we were expecting again (with Henry). Very easy and good cupcake recipe
