1 lb Brussels sprouts, trimmed and halved
1 tbs olive oil
salt & pepper to taste

pecan slices, sliced almonds or pine nuts toasted in the oven for 5-10 minutes

blue cheese crumbles or shredded Parmesan

Preheat oven to 400º

After Brussels sprouts are washed, trimmed and halved arrange them in a single layer on a baking sheet. drizzle with the olive oil and toss. Sprinkle salt and pepper on top

Bake in the oven until lightly browned, turning occasionally about 20 minutes.

Bring out of the oven and put in a serving bowl. Add cheese and nuts and serve hot.

I make this every week it seems & make it different every time depending on what we have on hand. I sometimes add golden raisins or craisins for a little sweetness or just eat the Brussels sprouts alone, roasted and plain.
