4 tsp lime zest
4 egg yolk
14 oz can of sweetened condensed milk
1/2 cup fresh lime juice
1 graham cracker crust

Directions:
Directions:
preheat oven to 325º

Grate zest off limes before juicing them. Whisk zest in to yolk and beat until light, about 2 minutes. Beat in condensed milk. Add lime juice and mix well. Set aside to thicken for 15 minutes.

Pour filling in to prepared pie crust and bake for 20 minutes or more until set.

Let cool and cover. Refrigerate for 6 hrs or overnight.
