3 cups all purpose flour
1 tsp. baking powder
1/2 tsp. salt
1 cup unsalted butter, room temperature
1 cup sugar
1 large egg
2 tbs. sour cream
1 tsp. vanilla extract

Vanilla icing:
4 cups (or more) powdered sugar
3 tbs (or more) whole milk
1/2 tsp. vanilla extract
colored sugar crystals, sprinkles and decorations

preheat oven to 350º
Sift first 3 ingredients into a medium bowl. Using electric mixer, beat butter and 1 cup sugar in large bowl until well blended. Add egg, sour cream and vanilla; beat 1 minute. Beat in dry ingredients in 2 additions until just blended. Gather dough together and divide in half. Flatten each half in to a disk; wrap in plastic and chill 1 hour (can be made 1 day advanced, keep chilled and soften slightly at room temperature just before rolling out and cutting in shapes)

Line 2 baking sheets with parchment paper. Sprinkle work surface and top of dough with additional sugar. Working 1 disk at a time, roll out dough to 1/4 inch thickness, cut out cookies with cookie cutters. Transfer to prepared baking sheets spacing 1 inch apart, scraping up dough and rolling back out until it's all used up. Chill cookies on baking sheet up to 1 hr.
Bake cookies 1 sheet at a time until lightly golden, about 12 minutes. Transfer to racks and cool completely

Icing: Combine 4 cups powdered sugar, 3 tbs. milk and vanilla in medium bowl. Stir until icing is well blended, smooth and spreadable, adding more milk by teaspoonfuls if too thick or more sugar if too thin. Spread thin layer of icing atop each cookie and if using sprinkles put them on before icing sets.
