Cranberry Chocolate Chip Cookies Recipe

2/3 cup butter, melted and cooled
1 egg 2 cups of flour
1/2 t baking soda 2 T honey
1-1/2 cups brown sugar, packed
1/2 t salt 1/2 t cinnamon
1 t vanilla
2/3 cup old fashioned oats
1 cup dried cranberries
3/4 cup chocolate chips
1/2 cup chopped, toasted pecans or hazel nuts

Directions:

Toast chopped pecans for 10 minutes in 350บ oven, cool
Blend together, in a large bowl , melted butter, brown sugar and honey.
Add egg and vanilla. Mix well.
On waxed paper, measure flour, baking soda, salt, cinnamon, and oats.
Add to butter mixture. Stir in remaining ingredients, nuts, chocolate chips,
and dried cranberries.
At this point, I roll into several rolls, wrap in plastic wrap and freeze in plastic
bag to bake later. One roll at a time. Slice and bake.


Bake at 350 on ungreased cookie sheet until lightly browned and centers are
still soft. About 12-14 minutes.
I use air insulated cookie sheets and under bake slightly, and let the cookies
rest for a minute or two before I remove them from the cookie sheet.
