1 lb bag of lima beans or 3 cups (I doubled this and used two bags of frozen Fordhook lima beans)
1 c. finely chopped red onion
2 c. chopped tomatoes
1/2 bunch chopped parsley
1/4 c. chopped green olives
1/2 tsp. dried oregano
1/2 c. olive oil
1/4 c. fresh lime juice
2 garlic cloves
8 oz or 1 1/2 c. feta

In a medium bowl, combine all ingredients and stir together. Cover and refrigerate at least 4 hrs or overnight. The longer it marinates the better!
