3 T. oil
10 lbs. pork, diced
4-5 extra large onions, chopped
2 T. garlic, minced
1 T. oregano
1 T. cumin
1 1/2 T. chili flakes
3 pints of tomato salsa or tomatillos
8 c. green chilis, chopped
1/2 bunch of cilantro, chopped
12 pork, ham, or chicken bouillon cubes
8 c. water

Directions:
Directions:
In a very large pot, brown the pork in the oil.

Add all the ingredients except the bouillon and water. Mix thoroughly and heat through.

In another pot, combine the water and bouillon cubes and heat to boiling.

Fill 3/4 of the pint sized canning jars with the green chili. Top off with the hot water leaving 1/2 - 3/4 inch head space. Wipe each jar rim and cover with a hot lid and ring.

Pressure can for 90 minutes at the appropriate pressure for your elevation. 15 lbs of pressure for Colorado.
