1 cup long grain brown rice
4 large bell peppers (slice a small portion of the bottom of the pepper off this will help the pepper sit flat. Slice the top of the pepper off, I like to use it as a lid for the pepper to keep the stuffing from drying out. Remove seeds, you can dice up the tips of the bottom of the pepper and use in the recipe.
1 large onion dices
2 tsp + 1 tsp olive oil
Meat- the recipe I found used Italian sausage, I have used hamburger or you could use mushrooms or black beans for a vegetarian version.
1/2 tsp ground fennel
1/2 tsp dried greek oregano
1/2 cup grated parmesan cheese
salt and pepper to taste
1/4 cup grated mozzarella cheese

tCook rice according to package directions or use rice cooker. Pre-heat oven to 375.
Trim bottom of peppers so they have a flat surface to stand on. Cut off a fairly generous amount of the stem end of the peppers. Remove seeds. Place hollowed out peppers in a baking dish that has been sprayed with Pam. Take the cut off bottoms and onion and sauté in a pan with 2 tsp of olive oil for 3-4 min. Brown meat. Mix meat, cooked onion, rice, and parmesan cheese. Bake peppers for 30 min. Add mozzarella bake for 10 more min or until melted.
