1 lb (450 g) lean ground beef
1 cup sliced onions
1 cup diced zucchini
2 tsp minced garlic
1 - 28 oz (796 ml) can stewed or diced tomatoes
2 tbsp soy sauce
1/2 tsp red pepper flakes
2 cups rotini (or other spiral pasta)
1 1/2 cups shredded cheddar cheese

Preheat oven to 350ºF and grease a 9 X 13" baking dish.

Fry ground beef, onions, garlic and zucchini for 8 to 10 minutes. Drain fat and pour beef mixture into the baking dish.

Drain tomatoes and add enough water to the tomato juice to make 2 cups. Add tomatoes, soy sauce and pepper flakes. Heat until the mixture is very hot. Stir in the rotini.

Pour over top the beef and stir to combine. Press pasta down to make sure it is covered in liquid and bake, covered, for 20 minutes. Remove cover, stir and sprinkle with the cheese. Bake, uncovered, for 15 to 20 minutes until pasta is tender.
