6 1/2 cups flour
1/2 cup shortening
2 tablespoons baking powder
1 teaspoon salt
3 cups hot water
one rolling pin
one tortilla warmer
one plastic sack
2 bowls

Add flour, baking powder, salt. Mix dry ingredients with hands. Warm water in saucepan until hot. Add shortening to dry ingredients mix and incorporate with hands. Add 1 cup warm-hot water to dry 3/4 of dry ingredients. Mix. Add another cup warm-hot water and incorporate into dough with hands. Put that ball of dough into a bowl.

Add half cup warm hot water to remaining flour mixture. Incorporate. Combine both doughs. Knead that ball of dough very hard until it becomes smooth about 5-10 minutes. Put dough in plastic sack(grocery store plastic bag). Let rest five minutes. Take out and knead for one minute. Form balls. Let balls rest in plastic sack for 10 to 15 minutes.

Roll out balls. Set pan on very high heat. place rolled out tortilla in pan for a couple of seconds. Turn over quickly. Press down using a clean pot holder to take out bubbles. Turn over again quickly pressing down on tortilla with hot pad where the bubbles are. Keep flipping until desired consistency. Don't cook them too much or they will Crisp. Let cool and place in gallon size plastic bag.

To make the dough in bread maker. Follow these instructions:
Add flour, baking powder, salt. Mix dry ingredients with hands. Warm water in saucepan until hot. Add shortening to dry ingredients mix and incorporate with hands. Add 1 cup warm-hot water to dry 3/4 of dry ingredients. Mix. Add another cup warm-hot water and incorporate into dough with hands. Do it again-add one more cup hot water. Put that ball of dough into a bowl. Knead until water is incorporated. Divide dough in half. Put half the dough in bread maker and set machine on "dough". Meanwhile knead the other half for 5-10 minutes and immediately place inside a plastic sack and tuck under so no air gets in. Form balls. Let rest in plastic bag for 10-15 minutes. See rest of directions above for how to shape and cook them.

P.S. do not leave dough in plastic sack for more than 20 minutes because the dough will 'sweat'.

*Use Crisco butter flavoring shortening, you'll love the smell and taste of the dough!

When you're ready to use them, if you have a gas stove, turn on low heat. Put tortilla right on burner to hear up. Flip again until its heated but not bubbling.
