8 large pieces bone-in skinless chicken or 12 pieces thighs and drumsticks
1/4 t salt
2 Tbl olive oil
8 oz. quartered mushrooms
2 small green peppers, diced
1 medium onion, chopped
2 cloves garlic
2 cans diced tomatoes (14 oz) with basil, garlic, oregano
1/2 cup red wine or water
1 tsp rosemary
1/4 tsp red pepper flakes
1 lb cooked spaghetti

Salt chicken and brown in oil. Remove. Add mushrooms, peppers, and onion and soften (5 Minutes). Add garlic, tomatoes, liquid, spices. Return chicken and simmer, covered, for 45 minutes. Then remove cover for 5 or 10 minutes. Serve over spaghetti. 8 servings
