1 1/2 c. sugar
2 egg whites
5 T. water
1/4 tsp. salt
1/4 tsp. cream of tartar
1 tsp. vanilla

Directions:
Directions:
Bring water to a boil in the bottom of a 2 qt. double broiler. In the top of the double broiler, combine sugar, egg whites, water, salt and cream of tartar. Place over the boiling water and beat at high speed with an electric mixer until icing stands in stiff, glossy peaks...about 7 minutes. Add vanilla, mix and remove from heat. Ice your favorite cake!
