Rhubarb Crunch Recipe

1 c. flour
3/4 c. old fashioned oatmeal
1 c. brown sugar
1/2 c. butter, melted
1 tsp. cinnamon
4 c. rhubarb, diced

1 c. sugar
2 tsp. light corn syrup
1 c. water
1 tsp. vanilla

Directions:
Directions:
Preheat the oven to 350º.

Mix the first 5 ingredients until crumbly. Press 1/2 of that mix into the bottom of a greased 9X9 pan. Put the rhubarb on top.

In a saucepan, combine 1 c. of sugar, corn syrup and water. Cook over medium to low heat stirring constantly until it is clear and thick. Stir in the vanilla. Pour over the rhubarb. Top with the remaining oatmeal mixture.

Bake at 350º for 1 hour.

Edith Ahlers reduces the brown sugar in the topping to 3/4 c. and the sugar in the syrup to 3/4 c.
