10 tbsp butter
1 7/8 c. sugar
4 egg yolks
1 c. crushed pineapple, including juice
2 1/2 c. cake flour
3 tsp. baking powder
1/2 c. coconut
1 tsp. vanilla
4 egg whites (stiffly beaten)

Directions:
Directions:
Cream butter and sugar. Add the yolks of the four eggs. Add pineapple and juice. Add cake flour, baking powder, coconut, and vanilla. Fold in stiffly beaten egg whites. Pour the batter into two pans and sprinkle 1/2 c. of coconut over tops of layers. Bake at 350º for 30 to 35 minutes. Frost cake with seven minute frosting (see in separate recipe) and sprinkle with freshly grated coconut.
