1 cup flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
2 cups 100% bran cereal
1 1/4 cups lowfat milk
1/3 cup light brown sugar
1 egg
1/2 cup applesauce
1/3 cup raisins, optional
1/3 cup chopped pecans or walnuts, optional

Directions:
Directions:
Heat oven to 400 degrees.
Let cereal, milk, and sugar stand in bowl for 5 minutes, then stir in egg and applesauce.
Mix dry ingredients, the add wet ingredients. add raisins and nuts.
Spray muffin pan with cooking spray, then fill 2/3 full. Bake for 18 to 20 minutes.
