1 cup onion, chopped
4 Tbsp. butter
1/2 cup dry white wine
1/2 tsp. salt
1 lb. bay scallops
4 eggs, slightly beaten
2 cups Herb Stuffing Cubes
4 slices Swiss cheese

Directions:
Directions:
Cook onion in butter, add 1/2 cup wine or water and salt. Bring to a boil, add the scallops; cook for 4-5 minutes. Combine stuffing and eggs; stir into scallop mixture. Mix well and spoon into 4 small casseroles, bake at 350 degrees for 25-30 minutes. Put diagonal cut cheese on top and return to oven to melt cheese. Serves 4.
