1/4 c. Coconut Flour
1/4 c. Unsweetened Cocoa Powder
1/8 tsp Salt
1 tsp Baking Soda
2 lg Eggs
2 lg Egg Whites
1/4 c. Sweet Potato Puree
1/3 c. Apple Sauce
1 tbsp Instant Coffee
1 tsp Apple Cider Vinegar

Preheat oven to 350º.
Allow eggs, applesauce, and sweet potato puree to come to room temperature.
Sift coconut flour, cocoa, baking soda, salt, and instant coffee together into a small mixing bowl.
In a stand mixer, beat together the eggs, sweet potato puree, and applesauce until smooth. Add the dry ingredients to the wet and beat until well combined and smooth. Scrape down the sides of the bowl and beat in the apple cider vinegar at the very end.
Fill muffin tins up nearly to the top of the tin and bake 30 - 40 minutes or until baked through.

These taste as sweet as any chocolate cupcake with sugar, but are so much better for you. I prefer using dark chocolate cocoa as the combination of dark chocolate cocoa and coffee really works well. You could use butternut squash puree or even pumpkin puree, but if using pumpkin you will want to add about 2 tablespoons of honey for some sweetness.
