Potato Salad Recipe

3/4 C sugar
1 t salt
2 T flour
2 eggs
3/4 C milk
3/4 C cider vinegar
3 T oleo
3 qts cooked potatoes
1 C chopped celery
1 C chopped onion
5 eggs, boiled
shredded carrots, optional
2 T Miracle Whip
Paprika to taste

Mix together sugar and flour
In a 2 or 3 qt saucepan, beat eggs, add vinegar, mixing well, add flour
and sugar mixture beating until smooth. Add milk and mix thoroughly.
Cook until thickened, stirring constantly. Remove from heat and stir in
oleo and return to heat, stir until oleo is melted. Cool.
Peel potatoes, and cook until done, ( 20 minutes after coming to a boil)
Just before removing from heat, add salt, stir thoroughly. Drain and
cool. When cool, cut up potatoes into a large bowl. Add chopped onion,
chopped celery , eggs, carrots.
Stir Miracle Whip into cooked dressing. Pour over potato mixture and
stir gently. Shake ground paprika over potato salad and stir again.
Top with more paprika to taste.
Best made a little time ahead to blend flavors
