3 egg whites, beaten
2 apples, peel and finely diced
1/4 c. chopped dried fruit, such as apricots or cherries
10 cloves garlic, finely chopped
1 bunch scallions, thinly sliced, include green tops
2 tsp. coarse salt
1/8 tsp. ground nutmeg
2 3/4 lb. ground pork
optional:
1 Tb. green peppercorns

Directions:
Directions:
Beat egg whites until frothy.
Stir in remaining ingredients, except pork.
Place pork in large bowl, make a well in the center, pour in egg mixture and knead together.
Form in to patties 1 inch thick and 2 1/2 inch diameter.
Cook in a heavy skillet over medium high heat in small amount of olive oil.
Cook patties approximately 7 to 8 minutes on one side, until browned, then turn over and cook about 6 minutes.
Makes fifteen 3 oz. patties.
The patties can be formed up to 3 days ahead and stored in a covered container in refrigerator.
They can be cooked up to 4 hours ahead and reheated in low oven.
