1 lb Yellow Summer Squash with skin, coarsely sliced with the skin on
2 medium onions, chopped course
3 tablespoons melted butter
Salt to taste
Black pepper to taste

Directions:
Wash the squash and slice squash with the skins intact. Slice onion. In a 10 or 12 inch cast iron skillet melt butter. Add sliced squash and onions. Bring to a slow simmer on medium low heat, stirring frequently. Add more butter if additional butter is needed. Cook until the squash is about half brown and half still yellow (about 15-20 minutes). The squash and onions will be very tender and resemble a stew. Add salt and pepper to taste and serve steaming hot.

Notes:
The squash must be stirred frequently, especially the last few minutes or it will burn. Do not add water, the squash will release all the moisture needed.
