3 tbsp. butter
1/2 c. finely packed brown sugar
3 medium cooking apples
9 maraschino cherries
1/2 c. vegetable shortening
1/2 c. granulated sugar
1 egg
2 c. all-purpose flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. ground ginger
1/4 tsp. ground cloves
1/4 tsp. salt
1/2 c. light molasses
1/2 c. boiling water
1 c. chopped apple
1/2 c. chopped black walnuts
Sweetened whipped cream (opt).

In a 9 x 9 x 2-in. baking pan, melt butter; add 1/2 c. brown sugar; blend.
Peel and core apples. From each apple, slice three medium thick rings (nine total). Chop remaining apple and reserve (about one cup). Place the apple rings on top of brown sugar. Put a cherry in the center of each. Cream shortening and sugar. Add eggs; beat well. Sift together flour, baking soda, cinnamon, ginger, cloves, and salt. Combine molasses and water; add alternately with mixture. Fold in reserved chopped apple and black walnuts. Bake in a 350º oven for 40 to 45 minutes or until done. Let stand five minutes on cake rack. Invert over serving plate; remove from pan. Serve with whipped cream, if desired.
