1 c. (2 sticks) unsalted butter (room temp.)
1/2 c. sugar
2 T. milk
1 tsp. vanilla extract
1/2 tsp. salt
2 1/2 c. all-purpose flour
3/4 c.dried cranberries (dried cherries are good too)
1/2 c. chopped pecans
3/4 c. shredded unsweetened coconut

In the bowl of an electric mixer, beat butter and sugar on medium speed until fluffy, about 2 minutes. Add milk, vanilla and salt. Beat until just combined.Gradually add flour, cranberries and pecans. Beat on low speed until fully combined. Divide dough in half. Shape each into 8-inch logs, about 2 inches in diameter. Roll logs in coconut, press to coat the outside of the logs. Wrap logs in plastic wrap and refrigerate until firm, about 2 hours. Preheat oven to 375º. Using a sharp knife, cut logs into 1/4-inch slices. Transfer to ungreased baking sheet, 1/2 inch apart. Bake until edges are golden, about 12 minutes. Transfer to rack to cool.
