4 small chicken breast pounded to 1/4 inch
4 tbsp flour
8 slices of thinly sliced prosiutto ( I buy the pkgs. already sliced at the specialty meat counter)
1/2 c finely shredded Asiago cheese
1 tbsp finely chopped fresh sage
1/3 c good dry white wine
3 tbsp butter divided (I sometimes use olive oil and butter combo)
salt and pepper to taste

Directions:

Sprinkle pounded chicken with salt and pepper. Lightly dredge seasoned chicken in flour.
Saute chicken on medium high in 2 tbsp melted butter until golden brown about 3 minutes each side.
On a baking sheet place chicken, to each breast add 2 slices of prosiutto and 1-2 tbsp of Asiago cheese. Place in a 350 degree oven and bake about 5-10 minutes until cheese is bubbly and chicken cooked through.

Meanwhile, in same skillet that chicken was sauted, add last tablespoon of butter, minced sage and and wine,reduce to half.

Once chicken is out of oven arrange meat on serving platter pour reduced sauce over and garnish with whole sage leaves.
