2 - 10 oz. cans of mandarin oranges
2 tbsp lemon juice
1 tsp vanilla
1/2 cup white sugar
2 tbsp Grand Mariner (or other orange liquer or orange juice)
1/4 cup cold water
1 envelope gelatin
2 cups whipping cream

Directions:
Directions:
Drain and puree the oranges. Put oranges in a bowl and add lemon juice, vanilla and liquer.

Pour water into a cup and sprinkle gelatin over it. Let sit for two minutes. Put in a sauce pan over medium heat, stirring until the mixture turns clear. Add sugar and stir to dissolve. Add this mixture to the orange mixture. If mixture feels warm, cover and put in fridge.

Whip the cream until stiff peaks form and, when fruit mixture is cool, fold in 1/4 of the whipped cream. Fold in the rest of the whipped cream.

Refrigerate for at least two hours. Can be made up to two days in advance of serving.
