2 cans unsweetened pineapple chunks
1 c. sugar
5 T. self rising flour
1 1/2 c. cheese, grated
1 c. crushed Ritz crackers (enough to cover casserole)
1 stick butter or margarine,melted

Directions:
Directions:
Drain pineapple chunks; place in large baking dish. Mix sugar and flour; sprinkle over pineapple. Place cheese on top. Top with cracker crumbs. Pour melted butter over the crumbs. Bake at 350º for 25-30 minutes. Place foil over the top during the last 10 minutes of bake time.
