4-6 boneless and skinless chicken breasts
2 cans corn, drained
2 cans black beans, drained
2 cans Rotel
1 pkg. ranch dressing mix
1 pkg. taco seasoning
1 1/2 tsp. chili powder
cheddar cheese
sour cream
tortilla chips
avocado, optional

Directions:
Directions:
Boil chicken in water, about 1-2" over chicken, to make sufficient broth. When chicken is done, cut into small pieces, replace in broth; add cans of corn, black beans and Rotel. Let simmer for 30 minutes; add ranch dressing mix, taco mix and chili powder. Simmer for 45 minutes. Top with cheddar cheese, tortilla chips, sour cream and avocado.

Don't add salt....it will be salty enough from the mixes and broth. If desired, can saute 2 onions before boiling chicken for additional flavor.
