1 stalk bok choy, chopped
1/2 onion, chopped
1 tsp. minced garlic
1 c. sliced shitake mushrooms
salt and pepper, to taste
2 T. olive oil

Directions:
Directions:
Cut off each end about 1", rinse with water, pat dry. Using a large electric skillet with a lid, or a saute pan with lid, saute onion in olive oil until translucent. Add garlic, careful not to burn to avoid bitterness. Pile the bok choy in the pan, add mushrooms; with lid on, steam for about 10 minutes or so. When the bok choy is wilted, like spinach, it is done. Add salt and pepper.

This is a Chinese cabbage, very mild compared to other greens. Good for leftovers! Just like spinach, bok choy wilts, so a huge amount before cooking may only serve 2.
