6 Qt Mysa
1/2 C Honey or Agave Nectar
3 Tbsp Butter
4 Tbsp Cream

Put the Mysa (Whey) in a large mouth pot and boil it down. This takes hours and will boil over frequently early on. It should boil down to about 1/4 of its original volume. If you burn it you have to throw it out.

Once the volume is reduced turn down the heat and stir in the honey, butter, and cream. Then carefully return to a full boil stirring constantly. It should turn light then to a dark caramel color. It should start to thicken at this point.

Once it begins to thicken start testing drops on a plate. When the drops begin to stiffen but not set it is done. Remove it from the heat and continue stirring until it has cooled. Store it in a jar with a lid and use it as a spread.
