2 lb. Velveeta cheese
corn tortillas
enchilada sauce
shredded cheddar cheese
white onion, chopped

Directions:

Cut Velveeta cheese into sticks the width of the log and 1/2"x1/2". Pour a layer of enchilada sauce on bottom of casserole dish. Dip each tortilla into slightly warmed enchilada sauce; place a stick of Velveeta, some shredded cheese and some onion in middle of tortilla and roll up; place in prepared casserole dish. Continue this process until dish is full. Pour remaining sauce on top of rolled up tortillas; add remaining cheese and onion on top. Bake covered at 375º for 45 minutes. Uncover the last few minutes.

Variation: Include taco meat or chicken in the middle of each tortilla, or simply top each enchilada with meat after serving.
