1-2 bay leaves
1/4 bell pepper julienned for flavor
olive oil
1 large onion, chopped
1 T. oregano flakes
1/2 T. cumin
8 ozs. tomato sauce
4 ozs. tomato paste
2 cans chicken broth
White wine

Directions:
Directions:
Saute' 1-2 bay leaves with 1/4 bell pepper julienned for flavor.
Base: 1 T. olive oil per chicken breast or chicken piece
1 1/2 T. fresh or powdered garlic
1 large onion, chopped
Add: 1 T. oregano flakes
1/2 T. cumin
Stir all together. You may add salt now or later. Cracked pepper to taste. Cook until tender. Deglaze by adding 1 cup white wine.
Add: 1 can (8ozs) tomato sauce
1 can (4 ozs) tomato paste
2 cans chicken broth
Add:Frozen chicken breast and simmer for 1 hour. Serve over rice.
Use leftover to make vegetable soup.
