4 cups of whole milk
2 cups of heavy cream
Salt
Lemon Juice (or some other acidic liquid like red/white vinegar)
Large pot
Colander

Place milk and cream into a large pot and let simmer for about 10 minutes. If you have a thermometer 180-185º F is great which is usually a medium boil. You should start to see bubbles around the edges and top. Add Salt. I usually just throw some in so 1/2-1 teaspoon I would imagine. Then add some lemon juice about an 1/8-1/4 cup should do. Stir it a few times. Turn off the heat. LEAVE IT ALONE for about 2 hours. It should start to thicken and clump a little shortly. Line a colander with cheese clothe place it in a large bowl. Pour the cheese in and empty the bowl of liquid placing the cheese in afterward. Now you can flavor it to your hearts desire.

Chef Fabio Viviani uses a recipe very exactly like this one. I recommend honey or syrup and some chocolate chips, but you could do whatever. I usually put mine in cannoli! This is really good with fresh fruits like strawberries or blueberries. Oh now I want to make some...
