2 chicken breasts (boneless, skinless, grilled, cut into small pieces)
2 T. olive oil
1 onion, chopped
1 yellow bell pepper, chopped (may use another color)
2 tsp. garlic (minced in a jar)
2 tsp. ground cumin
1 1/2 tsp. oregano leaves
1/4 tsp. ground cloves
1/4 tsp. ground cayenne pepper
2 cans black beans (rinse with cold water, drain)
2 cans Rotel, original
4 oz. can chopped green chiles
32 oz. Swanson chicken broth (100% fat free and 33% less sodium)

In a deep pot, saute onion and bell pepper in olive oil; add garlic, stir to mix. In a small bowl, mix all seasonings together. Combine chicken, beans, Rotel, chiles and broth with the onion mixture. Add seasonings, mixing all ingredients well. Simmer for one hour.

I purchase the large package of boneless, skinless chicken breasts and grill all at one time. I then cut the chicken in half and store in quart freezer bags in the freezer to always have grilled chicken ready when making this chili.
