6 strips bacon
3-4 ozs. pancetta sliced into bit size (opt)
1/2-1 whole medium, onion, sliced thin
1/2 c. tomato sauce
1 can stewed or chunky tomatoes
4 cloves, garlic whole
1/2 tsp. red pepper flakes or less
1/2 c. dry white wine
Parmease cheese and fresh chopped parsely to garnish

Fry bacon and cut into small pieces. Set aside.
Reserve some bacon fat. In same pan, add little oil and bacon fat and saute' garlic til golden. Remove. If you like garlic, you can crush roasted garlic and put in at Step # 5.
Add red pepper to toast a minute. Add onion and pancetta and slowly saute on medium heat until onions are golden and carmelize a bit.
Once the onions reach golden color, add can tomatoes, white wine, and tomato sauce. Reduce sauce on low heat.
Add bacon.
Cook pasta 'al dante" and add to sauce. Finsih cooking and serve.
Top with parmesean.
