2 Six oz halibut fillets, skinned
1/2 tsp. kosher salt
1/4 tsp. freshly ground pepper
Extra virgin olive oil for drizzling

Ciabatta or telera rolls
Olive oil
Garlic clove

Filling:
1/3 cup mayo
1/4 cup chopped sun dried tomatoes
1/4 cup chopped fresh basil
2 tablespoons fresh Italian parsley
1 tablespoon capers
Zest of 1 large lemon
1/2 tsp. salt
1/4 tsp .pepper
Arugula or whatever greens you have on hand

For the fish: preheat oven to 450
Drizzle fish with olive oil and bake, bake until flaky 10-15 min.cool
In a medium bowl combine mayo, capers, tomatoes, parsley, basil, lemon zest, salt and pepper. Using a fork flake the fish and add to filling.

Slice your rolls drizzle with olive oil and place in grill pan to get nice grill marks, rub with cut side of garlic clove .
Put your filling on bread and top with greens.

This is a delicious and really fresh tasting sandwich. Also this is pretty enough for company with fruit or watermelon on the side.
