2 lbs hamburger
1 onion
1/2 pint sour cream
1 1/2 C. shredded cheddar cheese
1 T. parsley
1/2 tsp. oregano
1/2 tsp pepper
1/2 tsp salt
1- 8 oz can tomato sauce
2 cans enchilada sauce
1 T. chili powder
1 small can green chilies
1 clove garlic, minced
8 burrito size flour tortillas

Directions:

In large pan brown hamburger and onion. Drain and return to pan. Add sour cream, 1 c. of cheese, parsley, oregano, salt, pepper, tomato sauce, 1 can enchilada sauce, chili powder, green chilies, and garlic. Let simmer about 10 minutes. Take tortillas and fill with mixture and place in 9X13 pan. Apply enchilada sauce to top and top with remaining cheese. Bake at 350º for about 30 minutes.

*This usually makes enough for 2 meals-I freeze half of the meat mixture. Delicious with shredded chicken instead of ground beef! If it seems too saucy I sometimes eliminate tomato sauce (can be very flexible with ingredients).
