1 tube refrigerator biscuits
1/2 C. Cheddar or Swiss cheese (whatever you like), shredded
1/2 C. ham, cut in small pieces
3 eggs
Salt and pepper, to taste
Cooking spray, butter, or vegetable oil

Directions:
Directions:
Preheat oven to 375º
Grease muffin tin using cooking spray, butter or vegetable oil.
Flatten the biscuits, by pressing them flat with your hands. Press one biscuit into each muffin tin cup. Evenly sprinkle the cheese and ham into each muffin tin cup.
In a bowl, whisk the eggs together. Divide egg mixture into the muffin tins, filling them evenly with the egg mixture. Season with salt and pepper.
Bake the cups for 20-25 minutes, until the eggs have set and the biscuits are golden brown.
