Heat oven to 400ºF. Line 2 rimmed baking sheets with foil. Cut two 4-lb chickens each into 10 pieces (2 drumsticks, 2 thighs, 2 wings, 2 breasts; each halved). In a small bowl, combine 2 Tbsp each paprika and brown sugar, 2 tsp dry mustard, 1/2 tsp cinnamon and 3/4 tsp each salt and pepper. Stir in 3 Tbsp olive oil until combined. Rub the spice mixture over the chickens and place skin-side up on the prepared baking sheets. Roast until the chicken is golden brown and cooked through, 40 to 45 minutes.
