1/2 cup heavy cream
1 T unsalted butter
26 ozs. good dark or milk chocolate(dark is richer, but if you like milk chocolate, use a great chocolate like Callebaut), chopped, divided.
1/4 to 1/2 cup Kahula OR 1 to 2 T
orange, raspberry, peppermint oil/flavoring. Especially nice at holiday time

© In a heat proof bowl set over simmering water, heat the cream until just hot, not boiling and turn off the heat. Add the butter and 12 ozs. of the chocolate to the hot cream. Stir until chocolate melts . Add Kahlua or flavors, cover with plastic wrap, and set aside at room temperature for 6 hrs or overnight.
The next day or 6 hrs later, using a small ice cream scoop, (1 1/4 in.) you can also use 2 spoons, scoop balls of the mixture onto sheet pans, lined with parchment paper. Chill for at least 30 minutes in refrigerator. When the chocolate is cold, place 10 ozs. of the remaining chocolate in a small glass bowl and heat it in a microwave oven on high for 20 seconds, exactly. Stir the chocolate and continue to heat for 20 seconds until the chocolate is smooth and shiny. The will take 5-6 times, depending on your microwave. Add the rest of the chocolate and stir until smooth and is a temp of about 90 degrees on an instant read thermometer(get one if you don't already have one-it is an invaluable tool in the kitchen).
Now the tricky part-using two teaspoons, pick up chilled truffle in one spoon and warm chocolate in the other and coat the outside completely. They don't look perfect-this is not a factory process. Place the coated truffle back on the parchment paper and allow to sit at room temperature until the chocolate hardens. Serve at room temperature.

No one will believe you made your own truffles-these are fabulous gifts for any birthday, holiday, etc. Place in a pretty box, lined with mini muffin papers, or on a decorative holiday plate. Cover with clear wrap and tie up in a bow. Listen for the sounds of lip smacking...........
