10 good sized bone in chicken thighs, skin on
6 large portobello mushrooms, sliced
2 T. olive oil*
1 c. red wine
1 c. good quality chicken or beef broth
3 cloves garlic, smashed and left in one piece
3 sprigs thyme, chopped
1/2 c. balsamic vinegar
1 T soy sauce
1 T Worchestershire sauce
dash of hot sauce
Salt and Pepper
1 T. flour
1 T. butter
chopped parsley, 1/2 cup for garnish
*may need additional oil for browning

©Preheat oven to 350ºF.
Use a heavy large covered pot, like Creuset, and heat 2 T olive oil over medium high heat. Generously salt and pepper chicken on both sides after patting dry(to get a good brown on chicken skin). Place in pot a few pieces at a time-do not overcrowd the pan or the chicken will not brown. Remove to plate and do the rest of the chicken until all pieces are browned.
Pour out any excess oil and return chicken to pan. Top with sliced mushrooms and all of the rest of the ingredients except the balsamic vinegar, flour, butter and parsley. Cover pan and place in oven for about 1 to 1 1/2 hrs until chicken is tender and almost falling off the bone.Remove pan from oven and make a mash of the flour and butter. Place pan back on burner and stir the flour/butter mixture into whole pan. Allow to cook and thicken for a few minutes. Add balsamic off heat.
To serve, remove any oil off the top, and plate chicken and mushrooms on a platter, large enough to hold a little of the sauce. Place additional sauce in bowl or gravy boat and serve also. Top the platter with chopped parsley.
Serve this with buttered noodles, smashed potatoes, or rice .

I created this recipe one night and when we sat down to eat and tasted the first bite, it was one of those moments that can never be recreated. It was so yummy that it has become a favorite "go to" meal. It is almost never as good as the first one, but I like trying!
