1 onion, chopped
1 Tbsp. minced gingerroot
1 clove garlic, minced
1/4 cup Kraft Signature Mandarin Orange with Sesame Dressing
4 cups chopped peeled butternut squash (565g)
3 cups 25%-less-sodium chicken broth

Directions:
Directions:
Cook and stir onions, ginger and garlic in dressing in large saucepan 5 min. or until onions are crisp-tender, stirring occasionally.

Add squash and broth. Bring to boil; cover. Simmer on medium-low heat 30 min. or until squash is tender.

Blend, in batches, in blender until smooth.

Makes 6 servings.

This recipe comes from What's Cooking Fall 2010. I'm a bit lazy with this recipe as I buy a jar of minced ginger from the grocery store along with pre-chopped squash in a bag from the produce department.
