4-6 quail
enough flour to coat
3 tbsp. flour
1/2 tsp. salt
shortening
1 tsp. salt, 1/2 tsp. black pepper

Directions:
Directions:
Take whole quail, cut down backbone so it will lay flat in skillet. Season with salt and pepper and coat with flour. Put them in skillet of hot fat, enough to cover bottom of skillet good. Brown quail turning once, then add flour 1/2 tsp. salt. Add water enough to make gravy to half cover birds. Cook until tender to fork. Serve hot.
