Peppered Bacon, cut into 4 equal pieces
Dried Apricots
Apricot Jam or Preserves-1 c.
Brown Sugar -1/4 c.
Soy Sauce- 1 to 2 T.
Toothpicks
Any amount of the ingredients you want to make-1 lb package of bacon and enough dried apricots to wrap makes about 50.

Cut bacon into four equal pieces and wrap apricots with a piece, secured with a toothpick.
Place in a baking pan/cookie sheet with sides, (to catch the grease-this is bacon, after all).
Bake at 400 F for 8-10 minutes, turn over to insure equal browning, and cook another 5-8 minutes or until done. Oven temps vary, so watch these to prevent burning.
Remove to platter or bowl and brush with glaze(heat jam, brown sugar and soy sauce to make glaze).
Sit back and watch them disappear!

This is one of my most requested items-everyone loves them and they are so simple to make. Use good quality bacon and apricots. Listen for the comments-"what are these?" The apricots plump when cooked and taste very different than the dried state.
