1 small head lettuce, shredded
4 to 6 oz. grated cheddar cheese
2 pkgs. Jiffy cornbread mix
1 medium onion, chopped
1 lb. ground beef
1 (16 oz.) can tomato sauce (Italian-flavored)
1 (16 oz.) kidney beans
1/2 to 1 tsp. salt
1/4 tsp. oregano
1-1/2 to 2 tsp. chili powder
1 to 2 tsp. vinegar

1. Preheat oven to 425º. Prepare lettuce and cheese and place each in a separate bowl; keep chilled in refrigerator. Prepare cornbread according to package directions and pour batter into a greased 9x10" baking pan. Bake according to directions.

2. While cornbread is baking, brown ground beef and onion until onion is limp and beef has lost it's redness. Add remaining ingredients and simmer for 10 mins.

3. To serve, cut cornbread into squares; then, split each square in half and place on individual dinner plates or into individual bowls. Cover cornbread with shredded lettuce, top lettuce with chili mixture and sprinkle cheddar cheese over top.
