2-1/2 to 3 lbs. beef stew meat
1/3 c. flour
3 tbsp. oil
2 tsp. salt
1/4 tsp. pepper
1 tsp. sugar
8 oz. can tomato sauce
5 cups boiling water
1/4 tsp. oregano leaves
1 bay leaf
1 large onion, chopped
Potatoes to desired amount, peeled and cubed
Carrots to desired amount, cut in 2" slices

Directions:

1. Coat stew meat in flour and brown in oil in a Dutch oven. Season with salt and pepper. Add tomato sauce, water, sugar, and bay leaf. Simmer, covered, for 1-1/2 hours.

2. Add chopped onions, potatoes, and carrots; cover and cook for 30 mins. or until vegetables are tender. Add oregano during the last 15 mins. of cooking time.

My Dad was not one big on compliments, but I do remember the one he gave me for this. He was a good cook in his own right, specializing in soups and "one pot" dishes, so when he told me this was the best stew he had ever had, it was a moment that went down in history!
